- 2 tablespoons olive oil
- 1 yellow onion, diced
- 3 cloves garlic, grated
- 2 tablespoons chili powder, OR 1 tablespoon smoked paprika + 1 teaspoon ground cumin + 1 tablespoon chipotle chili in adobo sauce + 1/2 teaspoon oregano
- 1/2 can tomatoes, OR 3 ripe tomatoes, diced or grated
- 1 cup water
- 1 teaspoon salt
- 1 can kidney beans
- 1 can pinto beans
- 1 can corn
- 2 chicken breasts, cut into bite-size pieces
(1) In a large pot, fry onion with a sprinkle of salt in oil on low-medium heat until soft, around 5 minutes, stirring to keep from sticking.
(2) Add garlic and spices and stir until fragrant for around one minute.
(3) Add tomatoes, water, and salt. Once they reach a simmer, add in beans and corn. Cook for 5 minutes.
(4) Add chicken and cook for another 10 minutes.
