- 1.5 cups rice
Wash the rice and let it soak in cold water .
- 1 onion
- 1.5 Tbsp ghee
- 1 bay leaf
- 1 small cinnamon stick
- 3 cardamom pods
- 1 clove
Finely dice the the onion. Heat the ghee in a medium size pot and the spices. Fry for about a minute the add the diced onion and sautee until soft, around 7 minutes.
- 1 large clove garlic
- Equal amount of ginger
Mash the garlic and ginger. Add them to the sauteed onion and spices. Fry for a minute or so.
- 2.75 cups water
- 1 tsp salt
Drain the soaking rice. Add it to the pot and stir until coated with fat. Add the water and salt. Bring to a boil, cover, and reduce heat to maintain a gentle simmer. Cook for around 15 minutes.
- 0.25 tsp saffron threads, ground
- 0.25 cup warm water
While the rice is cooking, soak the saffron in warm water. After the 15 minutes of cooking, give the rice a gentle mix, pout the saffron water onto it, cover and cook for another 5 minutes.
